The concept of what constitutes real cream has been blurred as the market has become flooded with a wide variety of products, some of them vegetable fat based. Real cream is a product separated from milk and which must contain at least 10% fat.
Cream embraces more than 400 aromatic substances that contribute an inimitable aroma when added to food. The dairy fat in cream helps bring out the fine aromas of both the cream itself and those of other ingredients. Real cream can only be whipped successfully if it contains at least 25% dairy fat.
